Tis the season for COOKIES!!!! And this cinnamon cookie recipe is from our Body Well program and it's one of our faves cuz it's quick and easy -- exactly what us busy moms need during the hectic holidays. Make it even easier by having the kids help make the dough while you sit back and enjoy a cup of hot cocoa!
Quick & Easy Cinnamon Cookies
makes 12-16 cookies, serving size: 1 cookie
INGREDIENTS
- 6 dates, pitted
- 1 cup old-fashioned oatmeal, dry
- 3/4 cup almond flour
- 1 tsp baking powder
- 2 tsp cinnamon
- 1 tsp vanilla
- 1/4 tsp sea salt
- 1/2 cup milk of your choice
DIRECTIONS
- Preheat the oven to 350 degrees & line a baking sheet with parchment paper.
- Place the pitted dates in a small bowl and cover with boiling water for 15 minutes.
- Then, add the softened dates in a food processor and blend for 1 minute.
- Add the rest of the ingredients (except for the milk and vanilla) to the food processor and blend until everything is well blended.
- Add the milk and vanilla to the mixture and blend for about 20 seconds.
- Next, roll a golf ball size of dough in your hands. Flatten into ½-inch thickness and place on the baking sheet.
- Bake for 12 minutes.
- Remove from the oven & allow to cool for 10 minutes.
