Quick & Easy Cinnamon Cookies

Tis the season for COOKIES!!!! And this cinnamon cookie recipe is from our Body Well program and it's one of our faves cuz it's quick and easy -- exactly what us busy moms need during the hectic holidays. Make it even easier by having the kids help make the dough while you sit back and enjoy a cup of hot cocoa!

Quick & Easy Cinnamon Cookies

makes 12-16 cookies, serving size: 1 cookie

INGREDIENTS

  • 6 dates, pitted
  • 1 cup old-fashioned oatmeal, dry
  • 3/4 cup almond flour
  • 1 tsp baking powder
  • 2 tsp cinnamon
  • 1 tsp vanilla
  • 1/4 tsp sea salt
  • 1/2 cup milk of your choice

DIRECTIONS

  1. Preheat the oven to 350 degrees & line a baking sheet with parchment paper.
  2. Place the pitted dates in a small bowl and cover with boiling water for 15 minutes.
  3. Then, add the softened dates in a food processor and blend for 1 minute.
  4. Add the rest of the ingredients (except for the milk and vanilla) to the food processor and blend until everything is well blended.
  5. Add the milk and vanilla to the mixture and blend for about 20 seconds.
  6. Next, roll a golf ball size of dough in your hands. Flatten into ½-inch thickness and place on the baking sheet.
  7. Bake for 12 minutes.
  8. Remove from the oven & allow to cool for 10 minutes.
